Thanks for the bug report. During the "player action" phase, you can always click the start over button to undo your actions. Once you click the confrim or done button, you can no longer undo your actions.
During the "welcome travelers" phase, you can click another room to choose where to place the guest. Once you confirm the room, you cannot undo your actions.
