I was able to convert a pearl into essences when attacked from Catherine's wheel when i had no ignore artifacts. As stated from Tom lehmann is possible to convert pearls out of your turn only if you have a react power or if the attack offer you a react power (dragon attacks)

If an attack doesn't include a React condition and you don't have a React Power of your own that you can use, then you don't get to convert Pearls out of turn. During your turn, you can convert Pearls to 1 Gold or any 2 standard essences at any time.
